The healthiest, tastiest, easiest-to-make chocolate dessert!
This weekend my best friend Jo came to visit me all the way from NYC for her birthday. Of course I wanted to celebrate with her and make her a birthday cake. Given that sugar, gluten, and dairy are NOT a part of my diet, I had to be creative.
Luckily, I absolutely LOVE to eat and I LOVE food that tastes good. So graciously Jo trusted and allowed me to create a raw, vegan delight for her birthday cake.
Let me tell you, it was rich, chocolately, gooey, delicious, made us moan, groan, and dance…the way every dessert should be!
A vitamix, powerful blender, or food processor is best to use, though you can do it by hand if you buy crushed or sliced almonds. Be sure to buy as many ingredients organic as possible. And be sure to add tons of LOVE!
The ingredients for this chocolately delight include:

Base
- ¼ cup cacao powder
- 1 cup of raw almonds
- 1 cup of dates (pitted)
Frosting
- 1 avocado
- 1 banana
- ¼ cup cacao powder
- ¼ cup grade B maple syrup
- 1 tablespoon of vanilla extract
- 2 tablespoons of coconut oil
- Dash of cinnamon
Topping (optional)
- Organic Raspberries
Recipe
- Place all of the ingredients for the base into the Vitamix. This will produces a sticky, gummy mash.
- Mold the mixed ingredients into a flat pan. This will be the base of the cake.
- Place all of ingredients for the frosting into Vitamix and blend until mixed and reaches a pudding consistency.
- Spread the frosting on top of the base.
- Place in freezer or refrigerator until ready to serve.
- Add berries just before serving.
